Something Really Fast

Everything is store bought and there is no cooking involved! Sounds like music to my ears, especially since chances are things will get thrown together at the very last minute.

Christmas Tree Fruit Platter

Ingredients:

10 large kiwis,
approximately a dozen raspberries,
6 blackberries,
and a tiny piece of pineapple.

Directions:

1. Wash the fruits really well.
2. Slice the top and bottom off of one of the kiwis, then slice one vertical slice off of its side to form the trunk.
3. Peel the remaining kiwis and slice them into 4 rounds a piece, including the remaining kiwi that was used for the tree trunk – it will be a little less round, but completely fine.
4. Arrange the kiwi slices into a triangle shape, stacking them up to create a fuller tree.
5. Place the raspberries whole on the tree upside-down spread out like ornaments.
6. Slice the blackberries in half, then place them on the tree with the cut side facing down as the other contrasting ornament.
7. Use a star shaped cookie cutter and cut out the tree topper out of a slice of pineapple (mango or yellow watermelon would also work well).

Something for the Adults

Easy Decadent Truffles

Okay so this dessert doesn’t take under 15 minutes to completion. But it does take under 15 minutes to prepare if you don’t take into count the time it takes to set. Plus this can be made ahead and is richly decadent. You could booze it or choose to keep it virgin – just omit the vanilla, and add booze of choice. Whichever way you make it, who doesn’t love chocolate?

1 1/2 teaspoons vanilla extract

Coating Options:

Good quality cocoa powder
chopped nuts
icing sugar
melted white chocolate
sprinkles
desiccated coconut

Directions:

1. In a large bowl, beat cream cheese until smooth.
2. Gradually beat in confectioners’ sugar until well blended.
3. Stir in melted chocolate and vanilla until no streaks remain.
4. Refrigerate for about 1 hour.
5. Shape into 1 inch balls.
6. Roll in desired coating

Ingredients:

1 dozen strawberries (I love Korean Strawberries because they are usually sweet)
a handful of chocolate sprinkles

Directions:

1. Whip your cream to stiff peak.
2. Slice off the leafy end of each strawberry so that they can stand up evenly. Then slice the tip off for the hat.
3. Use a teaspoon to dollop whipped cream on top of the standing strawberry, then plop the little “hat” on.
4. Add another tiny dollop on the tip of the “hat” so that it looks like a tiny pom-pom.
5. Use two chocolate sprinkles to resemble eyes for the santa strawberry, where the dollop of whip cream is.
6. Then using a toothpick, make two tiny tips for buttons using the whipped cream down the front of the strawberry.

And you’re done!
