For more than a year now, most of us have been staying in, trying hard to normalise our new routine – the kids’ online classes, working from home, juggling domestic duties and so on. 

As we are getting used to our new lifestyle, many of us have found new hobbies and newfound skills in areas such as home decor, gardening and the most popular of all, cooking! Cooking can indeed be therapeutic for some, even more so at this point in time. 

We talked to a few of our mum-friends to find out how they are holding up right now with managing a full house 24/7, especially in the kitchen department, and here’s what some of them have to say:

Creamy Fish with Mushrooms

Cooking time: 10 mins

Serving size: 4 persons 

Ingredients:

  • 1 Can (300g) Campbell’s® Condensed Cream of Mushroom Soup, mixed with ½ can water
  •  Cooking oil
  • 250g Fish fillet 
  • 1 Onion, chopped 
  • 120g Shitake mushroom, sliced

For fish marinade

  • ½ tsp Mixed herbs
  • ½ tsp Grated garlic 
  • Salt and pepper

  • Parsley, chopped

Method:

  1. Marinate fish for 20 minutes. 
  2. Heat up oil in a frying pan and cook fish for 5 minutes or till browned. Set aside. 
  3. In the same pan, sauté onions and mushrooms until browned. Pour in Campbell’s® Condensed Cream of Mushroom Soup. Stir well and simmer for 3 minutes.
  4. Place fish into the sauce and simmer for 2 minutes. Garnish with parsley and serve warm.

Chef tip: Paprika can be added in to give a touch of smoky flavour.

Braised Beef with Cabbage

Preparation time: 10 mins 

Cooking time: 20 mins

Serving size: 4 persons 

Ingredients:

  • 1 Can (310g) Campbell’s® Condensed Tomato Soup
  • Cooking oil
  • 350g Beef tenderloin, thinly sliced 
  • 150g Cabbage, shredded
  • 2 pcs Star anise
  • 1-inch Cinnamon
  • Salt and Pepper

For beef marinade

  • 1 tsp Garlic, minced
  • ¼ tsp Cinnamon powder
  • Salt and Pepper

Method:

  1. Marinate beef for 20 minutes in the fridge. Set aside.
  2. Heat up oil in a pot and stir fry beef till browned. Add in cabbage and stir fry for 5-6 minutes.
  3. In the same pot, pour in Campbell’s® Condensed Tomato Soup, star anise and cinnamon. 
  4. Simmer for 8-10 minutes or till beef is tendered. Season with salt and pepper. Serve warm.

Chef tip: Beef can be replaced by chicken or chicken sausage for the non-beef option. 

Oregano Grilled Chicken

Preparation time: 10 mins 

Cooking time: 20 mins

Serving size: 4 persons 

Ingredients:

  • 1 Can (305g) Campbell’s® Condensed Creamy Chicken Mushroom Soup, mixed with ½ can water
  • Cooking oil
  • 2 (500g) Boneless chicken chops, skin on 
  • 200g Brown button mushroom, sliced
  • ¼ tsp Dried oregano
  • Salt and pepper

Garnishing (optional)

  • Chive

Method:

  1. Marinate chicken with salt and pepper for 20 minutes in the fridge. Set aside.
  2. Heat up oil in a frying pan. Place the chicken skin side down and pan fry for 8-10 minutes. Then, flip the chicken over and continue cooking until browned. Set aside.
  3. In the same pan add in mushroom and stir fry for 1 minute. Pour in Campbell’s® Condensed Creamy Chicken Mushroom Soup and stir well. 
  4. Add in oregano and chicken. Simmer for 8-10 minutes. Garnish and serve warm. 

Chef tip: Serve with roasted vegetables as a wholesome meal

Beef with Vegetables Delight

Preparation time: 15 mins 

Cooking time: 15 mins

Serving size: 4 persons 

Ingredients:

  • 1 Can (305g) Campbell’s® Condensed Mushroom Potage, mixed with 1 can water
  • Cooking oil
  • 180g Beef tenderloin, thinly sliced 
  • 70g Carrot, diced
  • 50g Potato, diced
  • 40g Celery, diced
  • Salt and pepper

Method:

  1. Heat up cooking oil in a pot and stir fry beef till browned. Set aside.
  2. Using the same pot, stir fry carrot and potato for 1-2 minutes.
  3. Pour in Campbell’s® Condensed Mushroom Potage, beef and celery. Simmer for 5-10 minutes or till beef is tendered. Season with salt and pepper. Serve warm.

Chef tip: Serve with pita bread, rice and pasta. 

Spiced Rice

Preparation time: 10 mins 

Cooking time: 15 mins

Serving size: 4 persons 

Ingredients:

  • 2 tbsp  Cooking oil
  • 1 Big onion, sliced 
  • 1 Cinnamon stick, 2-3cm in length  
  • 2 Chicken whole legs, halved
  • 2 tbsp Kurma powder, mixed with a bit of water until become paste
  • 1⅛ cup Basmathi rice, washed
  • 300g Campbell’s Cream of Chicken Condensed Soup, mixed with 1 Can of water

Garnishing

  • Coriander leaves 
  • A handful of roasted cashew nuts

Method:

  1. Heat up oil in a frying pan, sauté onion and cinnamon stick until fragrant. Add in chicken and cook until brown on both sides. Then, add kurma powder and cook for 1 minute. 
  2. In a rice cooker, pour in the rice, sautéed ingredients with chicken and followed by Campbell’s Cream of Chicken Condensed Soup. Stir well and let it cook. 
  3. Garnish with chopped coriander leaves and cashew nuts before serve. 

Chef tip: Black and golden raisins can be added in to make it more flavourful.
